MENU FOR THE WEEK OF NOVEMBER 15, 2010

 This week’s focus is on the long range – food for the Thanksgiving feasts.  Ergo, what I prepare this week will be fast and easy as I’ll be busy cooking more important fare.  I have about finalized the menu for Thanksgiving weekend and both Warner and I have been busy feeding the freezer.  At this point I’ve done a wonderful braised brisket with dried cranberries, Portobello mushrooms, red wine and beef stock.  I’ll have that ready to serve Weds night as the first wave of family arrives.

 

I’ve also done two each of a pumpkin cranberry bread and a cheese and chive loaf.  They can have those for breakfast Thurs.  Lunch will be a lovely Escarole Soup with Turkey (what else today) meatballs. Meatballs for 12 – in the freezer.

 

Weds. night I’ll start the season of holiday cookies.  In the freezer so far: My Mother’s Sugar Cookies, Dark Chocolate Cookies, Aunt Jennie’s Pizzelles, Low Carb Chocolate Chocolate Chip, and Old Fashioned Peanut Butter. Also in the freezer:  Low Carb No Flour Chocolate Cake, Goat Cheese Cheese Cake, and a Chocolate Hazelnut Torte.

 

And this morning Warner put up something like 20 pounds of sausage – to be added to the two types of bacon he cured (and a third on the way).   We’ll do one Fri with Roasted Vegetable Frittatas and the other on Sat. with Ina Garten’s Baked Eggs.

Warner smoked the brined turkey this week. The sauce from the drippings was way too smoky but the bird was lovely.  We’ll do this one and I’ll simply render some turkey fat for the usual gravy. The bird was moist – with just a tint of smoky rose in the meat.  And the skin had a wonderful looking glaze.

We’re still waiting on numbers.  We know we’ll be at least 13 on Thanksgiving and at least 16 the night after.  These numbers still could go up by 4-5.  So I’ve been counting the silver and considering the table (s) setting(s) and beginning to decide on serving dishes. I need to have this all set in my mind before the festivities begin.  I am also, as I finalize the menu, typing up each recipe so my niece has as close a count on carbs for Daniel as I can give her.  It takes some time, but also is helpful in preparing my shopping lists…. (Buy this week…buy the Monday before.  Buy Weds morning.  Send Warner out for….etc)

 

So, heaven help us, we’re on our way.  No one should leave here hungry!
