The noodle cake is from Jean George: Cooking at Home with a Four Star Chef by Jean George Vongerichten.
It is really very simple.
You cook up 3/4 lb of fresh egg noodles (Chinese) and toss them with chives and chili garlic paste to taste.
Mix well and pack into a 10" non stick frying pan. When the bottom is browned, slip the cake onto a plate, top with another plate and invert. Return to pan to brown on second side. Voila!
